Time has added layers of complexity to this wickedly wild, high-ester spirit, making it an essential experience for rum lovers. Long Pond (and other high-ester distilleries in Trelawny) uses traditional fermentation techniques. They use dunder, the acidic spent wash from previous distillations, in muck pits to cultivate a unique bacterial wash.
It is less floral and sweet than other high-ester Jamaican marks and leans heavily into savory, vegetal and industrial notes. Tasting notes include overripe bananas, rotting tropical fruit, olives, iodine and rubber cement. On the palate: oily, peppery, with rich hints of papaya, mango and savory flavors.
