Fermentation for MLC uses a long, two-week, wild-yeast process in open-air wooden and metal vats to build up the heavy ester flavors without the use of dunder pits.
This is the highest ester rum from Clarendon and is rarely seen as a single cask. It is mostly used as an accent for other blends from the distillery.
