From molasses and fresh cane juice,through long, wild fermentations,in heavy pot stills,to the bottle at 63%, with nothing added.
Every marque is a distillery's own recipe. The steps stay the same, the results never do.
- Most marques start from molasses. River Mumma is made from fresh cane juice nectar at Worthy Park.
- From 30 hours up to a month. In some distilleries dunder (stillage from previous distillations) and muck (a decaying mixture of dunder, cane trash, and fermentation residues) intensify the development of exotic esters.
- Traditional Jamaican heavy pot stills keep the weight, the fruit and the funk in the spirit.
- Bottled unaged at traditional overproof strength with no additives, a peek inside the distillery walls.
